In my quest to find a suitable pumpkin dessert to convert my family back to the squashy goodness, I figured it would be a good idea to try some non-pie options as well.
First up was Crockpot Pumpkin Pudding from Stephanie at A Year of Slow Cooking. You can't get much easier than throwing together a bunch of ingredients and letting them steep in a slow cooker. Best of all, it tastes fantastic. I brought in the leftovers to the office and treated my co-workers to mini parfaits with a whipped cream topping...all to rave reviews!
Next, I made my first-ever pumpkin roll. It was quite the simple success thanks to the recipe and instructions over at How Does She? You can even see how spongy the cake is in the picture above. It's so spongy in fact, that the cake was sticking to the plastic wrap when I wanted to save the leftovers. To prevent more sticking, I wrapped the pumpkin roll first in parchment paper and then in plastic wrap. Worked like a charm...and the rest of the pumpkin roll was beautiful even for leftovers!
